Cornbread Casserole

I'm afraid I must admit I dropped the ball today! I completely forgot to take out my Chicken Enchilada Chicken out of the freezer this morning. I was a wreak at about 5:00 today when I realized it. I started to panic, but then I told myself to calm down because I have pre-made seasoned ground beef. Problem was I couldn't remember if I had any pasta noodles.

Once I got home I checked my pantry and pulled a can of diced tomatoes and beans. I then grabbed my bag of Homemade Gourmet Texas Cornbread and pulled out my Taco Seasoned ground beef. I didn't have a can of corn so I got a bag of frozen veggies. I mixed my cornbread as per the directions on the label-have I mention how yummy our cornbread is? I put my veggies in my Pampered Chef microwave bowl. Then I put the bag of meat in the microwave to defrost. I pretty much mad the Taco soup, but without the water. Then I dumped this in a 9x13 pan and then poured the cornbread over it. Placed it in the oven at 350 degrees for 35 minutes. So In 45 minutes dinner was ready! Once again, with a little planning and Homemade Gourmet I was able to get dinner on the table with very little time and effort!


Love our Taco Soup? Next time you make a batch of Taco soup and have leftovers, just drain the soup and mix it with Texas Cornbread for a great leftover casserole!


Homemade Gourmet Texas Cornbread has a light and delicate texture and is less dense than some tradition corn breads~it's the best!!

Italian Mozzarella Meatloaf

Today was one of those days that I'm so lucky to have Homemade Gourmet. I was so busy at work today and ran almost an hour late. Fortunately, I prepared a meatloaf a couple weeks ago. Yesterday I pulled my Italian Mozz Meatloaf out of the freezer to thaw. Little did I know I would be getting home almost at 7:00 today! Well, when I left work I called my husband so he could put the meatloaf in the oven. By the time I picked up Joseph and got home, it was in the oven with 10 minutes left to go. I quickly made mashed potatoes and warmed up green beans. Homemade Gourmet to the rescue again! If I hadn't prepared meals ahead of time I would have picked up dinner in a drive thru.

Recipe of the Day...

Caramelized Baked Meatballs
7 TBS Old Fashioned Meatloaf Pantry Staple or 1 Homemade Gourmet® Bacon Cheeseburger Meatloaf Mix
2 lbs. ground meat of choice
1/2 cup ketchup2 cups shredded cheese (I used 1 cup cheddar and 1 co-jack)
2 eggs
2 lbs. bacon
2 cups water
2 cups brown sugar
1 small onion sliced

Mix meatloaf mix, meat, ketchup, eggs and cheese. Form into balls.Cut bacon slices in half and wrap a slice around each meatball, use a toothpick pushed through the meatball to hold the bacon on. Bake in a cake pan for 20-30 minutes at 350 degrees. Remove from oven and drain grease. Putinto a crockpot and add sliced onion. Put sugar and water in a smallpot and bring to a boil. Pour over meatballs and let simmer for a fewhours. The longer you let sit the crisper the bacon gets.

Easy Spaghetti

For dinner one night last week we had a Spaghetti night. I got home and grabbed one of the Garlic Basil ground beef bags. I ran hot water over it. I got my spaghetti going and poured spaghetti sauce in a pan. Then I dumped the meat in the sauce. Drained the noodles and opened a bag of Ceasar salad. Dinner didn't take very long and the kids love spaghetti. I made the entire package of spaghetti so I had extra that I froze for an even faster dinner later!

Another 5lbs of Ground Beef....

I took out another 5 lbs of ground beef Monday and pulled out my Italian Mozzarella Seasoning and Taco Soup Seasoning Pantry Staples and went to work.

First I put about 1 lb of beef to brown. I did not use any seasoning for this. While that browned, I made an Italian Mozz Meatloaf. I put 1 1/2 lbs of the meat, 1 egg, 1/2 c ketchup, 8 TBS of the Iatalian Mozz seasoning, and mixed together. I put this mixture in an 8X8 Glad plan-I love these...they can go to the freezer to oven to microwave to dishwasher! I covered it with foil and wrote on it 'Italian Mozz Meatloaf'-the date and the baking directions. Then I covered it with the lid and put in the freezer.

I drained the 1lb of meat and put it all into a quart size freezer bag-labeled. Then I browned the remaining meat. I added about 5 TBS of the Taco Seasoning. I divided this into 2 freezer bags. Now I have a meatloaf that can go frozen into the oven and be ready by the time I get home. I'll only have to make quick mashed potatoes and green beans to complete this yummy meal. My kids will eat this up.

I can make beef tacos and an enchilada casserole (or a western meal casserole) with the Taco seasoned meat.

The unseasoned meat....well, its for Sloppy Joes! With 5 lbs of ground beef I have 4 meals waiting in the freezer!
