I love this mix from Homemade Gourmet. When I make this casserole I get 2 batches out of it. I use 2 8x8 Glad Ready pans that can go from the oven to freezer to microwave. We eat one for dinner and the other batch goes in the freezer for a quick meal that even my husband can handle.
